Usage notes | • Do not mix or substitute reagents or materials from other kit lots or vendors. • The sample preparation must be done on ice to prevent the enzyme inactivation, and the enzyme activity should be determined on the same day. avoid repeated freeze-thaw. • Ensure all reagents and equipment are at the appropriate temperature before starting the assay. • The optimal reaction temperature of polyphenol oxidase for different samples is slightly different, and it can be adjusted between 25-37℃. |

Background | Polyphenol Oxidase (PPO) is widely found in animals, plants, microorganisms and cultured cells. As a copper-containing oxidase, PPO can causes browning by oxidizing monohydric phenols and dihydric phenols to produce quinones. This enzyme is also closely related to fruit and vegetable processing, tea quality and tissue culture. |
